The 2001 vintage is one where legendary wines were produced. This 2001 Staglin Family Vineyard Cabernet Sauvignon is such a wine. The vintage was earmarked by abundant heat in May and June followed by a cooler than normal July and August. This cooling trend gave the red grapes plenty of hang time and the wine shows it. There is a deep black color with ripe aromas of black cherry and plum. The flavors are mushroom, blueberry and distinctive caramel from the 100% new French oak barrels. The finish lingers with hints of chocolate, ripe plum and tobacco. The tannins are supple and silky with a lingering flavor of black tea. The wine is youthful and friendly now and should continue to develop beautifully for 10-15 years.

Virginia Philip, Master Sommelier of The Breakers, Palm Beach, has opened her first namesake Wine Shop and Academy. At nearly 1,800 square feet, and with 400 personally selected offerings spanning regions all over the globe priced as low as $13, the shop brings Philip’s extensive and encompassing experience to the heart of West Palm Beach. The shop will also offer wine education programs utilizing Virginia’s extensive experience. Programs will range in focus from regional knowledge to food and wine pairings, as well as how to buy wine and build a cellar. Costs for the programs will be $25 to $50 per class, depending on the subject matter. A limited number of eight-week classes will be offered for those looking to immerse themselves completely within Virginia’s full range of knowledge.

Virginia became the tenth woman in the world to earn the extraordinary accreditation of Master Sommelier (there are now 21). This achievement was complemented when she earned the national title of “Best Sommelier of the United States” in 2002 from the American Sommelier Association. Virginia has also been on the Board of Directors for the Court of Master Sommeliers.

When PBWA Chairman, Ted Mandes, talks you should listen. For years now, he’s been advising that one of the greatest undiscovered treasures in the wine world is Ed and Trish Snider’s Beau Vigne. Well, let’s say the cat’s out of the bag and, unless you were hatched on another planet, you now know all about these fantastic wines. In fact, when none other than Robert Parker tasted them, he was just floored. “This is one of my favorite unheralded producers in Napa Valley. The wines have off-the-charts richness, great balance, and the potential (at least in the case of the Juliet and the Reserve) to be aged for 20 or more years. There is a striking purity and intensity to these wines that merits serious attention. They all come from a small nine-acre vineyard in the Stags Leap appellation.”

“There is a purity and richness to this bottling I absolutely love.  The deep red color is fantastic and is ever so inviting.  This is the widest mélange of fruit and character in the profound Beau Vigne lineup.  This wine lives up to its position of a Reserve.  The nose begins as brooding of black fruit but shortly builds to include lively mountain terroir.  What is “mountain terroir?”  It is the racy and complex array of red fruit that shows itself in higher elevations.  In support of the fruit is warmth from barrel vanillin, espresso ice cream and biscotti center.  The notes of confection on the nose are amazing.  The palate drinks of youth with absolute potential.  Driven by dried herbs, forest and tobacco notes, black berry and black stone fruit surface right through to the front of the palate.  The balance of this wine sits high.  In its youth, it is nervy and complex with a huge future ahead.  The tannins of this mountain based cabernet could use a decade to yield.  The day that time comes, there will be bliss.  But for those who consume this wine at a young age, you will definitely not be disappointed.  Cellared well, this wine should survive and drink well into its late teens or even twenties (+2028). 100% Cabernet Sauvignon” Kirk Venge, Beau Vigne

In 1982, Sir Peter Michael established the Peter Michael Winery on a square mile of rocky volcanic ridges that form the western face of Mount St. Helena in Sonoma County. From the beginning, the wine growing philosophy was modeled on the French tradition infused with a few modern influences: One, the vineyard terroir would be the single most important feature. Two, the wines would be elegant rather than overstated. Three, there would be a hundred-year commitment to the development of a great estate. The majestic 2006 Arietta H Block reverts to its typical blend of 60% Cabernet Franc and 40% Merlot. The breadth and ripe fruit of the wine will make it relatively flattering to drink while young, but tremendous stuffing and depth will promote development in the bottle for fifteen years, at least. Critic Stephen Tanzer notes: “Good deep ruby. Black raspberry, mocha and menthol on the nose. Sweet, creamy and densely packed, with rather wild flavors of raspberry, mocha, game and tobacco. Structured, backward wine with terrific length. The building tannins show full ripeness.”

The South Florida Rising Star Chef Award 2008 winner, Clay Conley, has already logged in two decades of experience in all aspects of the restaurant industry. Conley started washing dishes at age 13 and fell in love with the atmosphere of the kitchen; he eventually found his way into Todd English’s kitchen and it was all up (and around the world) from there.

During his 10 years with the Olives Group, Conley worked in Boston, Washington, DC, Las Vegas, and Tokyo, eventually becoming the culinary director for all 18 of English’s restaurants at age 29. In 2005, he moved to the Mandarin Oriental in Miami and took over Azul, the hotel’s elegant, waterfront fine dining restaurant, where he brought the ingredients and techniques of his global experience together in his eclectic menu. Chef Conley draws culinary influences from his surroundings (an Indian exchange student living with him inspired his yogurt-marinated swordfish) and nearly every dish has a story behind it.

Ed and Trish Snider are the owners of Beau Vigne. Born and raised in the Napa Valley, Ed was the head football coach for St. Helena High School located in the heart of the Napa Valley. Among the young men he coached at St. Helena, was the winemaker for Beau Vigne, Kirk Venge. He is a crafty winemaker who has been around vineyards and wineries his entire life. His father, Nils Venge, is an icon in the wine world who always had his son, Kirk, either in a winery or in a vineyard. To Kirk’s credit, he has polished his own skill set and reputation as one of the finest wine makers in the Napa Valley. Beau Vigne is very excited about their new relationship with Kirk.

The Sniders bought the property in 2002 and named the ranch Stags Ridge Vineyard, a vista overlooking Stags Leap. Stags Ridge is now over eight acres of Cabernet Sauvignon and one acre of Cabernet Franc and Petite Verdot (Trish’s Garden). Stags Ridge Vineyard sits at about 1,350 feet altitude in the Atlas Peak appellation on the eastern edge of Napa. Stag’s Ridge has become known as a unique vineyard recognized in the valley as a very special place.

Rudd winery was established in 1996, when Leslie Rudd purchased the 54-acre estate in Oakville. Since the purchase, Mr. Rudd has made extensive renovations to the property, to include a complete replanting of the vineyards to close-spaced, red Bordeaux varietals and the expansion and renovation of the winery, including custom-designed tanks and a gentle, gravity-flow system. In addition, 22,000 square feet of caves have been dug below the winery to provide ideal aging conditions. In April 2002, Charles Thomas joined the Rudd team as Director of Vineyards and Winemaking. Charles brings to Rudd over 25 years of winemaking and vineyard experience.
